Sweet potatoes are a staple in many cuisines, offering a rich source of nutrients and versatility in cooking. Among the numerous varieties, Beauregard, Evangeline, and O’Henry stand out for their unique characteristics and uses. Here’s a brief overview of each:

The Beauregard sweet potato is Louisiana’s common orange-flesh sweet potato that always cooks well and tastes excellent.
Evangeline
is our premiere offering for the sweet potato connoisseur. Years of breeding at the Louisiana State University AgCenter has gone into developing a variety which has twice the sucrose (63mg/g fresh weight baked) as typical orange flesh varieties. Evangeline does have less maltose, a sugar produced during cooking. But this is a great tradeoff. Sucrose is perceived to be much sweeter than maltose. Evangeline also has 38% more beta-carotene than typical orange flesh varieties. The deep orange, nutrient rich flesh is unequaled. The combination of sugar and aroma producing carotene ensures no matter how prepared – baked, boiled or microwaved – the superior flavor comes through.

The O’Henry sweet potato has a white skin and is white inside. It is drier and less sweet than an orange sweet potato. This sweet potato is primarily used as an excellent substitute to a russet potato in any recipe, such as a roast.
